Ocean Spray Summer Parfait Recipe and a Giveaway!

It is summer time, which means time for some great summer drinks on a hot day! We are big fans of Ocean Spray and all of their delicious juice options on the shelves. This month, Ocean Sprays is on a mission to find and celebrate a person whose selfless attitude and giving spirit is making his/her community better.

I decided to make the Cran-Lemonade Parfaits for a great, summer snack for my family. It was so easy to do and tasted absolutely wonderful. Here is the recipe, with some alterations from the original,  if you are interested:

Ingredients: 1 cup one percent milk

3/4 cup Ocean Spray Diet Cranberry Lemonade Juice Drink- We used Diet Cranberry Lime.

1 (1 ounce) package instant sugar-free lemon pudding mix

1/3 cup Ocean Spray Craisins® Dried Cranberries
1 cup fat-free non-dairy whipped topping

Can use granola if you like for garnishings.

Directions:

In a small  bowl, whisk milk, lemonade and pudding mix 2 minutes or until it turns thick.

Put 1/4 cup pudding mixture into bottom of four 1-cup  jars or cups; let stand 3 to 5 minutes or until pudding has firmed up.

Top each with 3 teaspoons Craisins and 3 tablespoons whipped topping. Repeat layers, dividing ingredients evenly among the cup. Garnish with additional granola and Craisins if you like.summer parfait

Serve immediately or cover and refrigerate until ready to serve.

Makes 4 (1 cup) servings

This was such a delicious desert to make and a very healthy desert without all the extra calories!summer parfait

    I used to make cranberry vodka martinis a lot, and Ocean Spray was my bestie! I don’t drink anymore simply because I am just too busy being a mom to drink, but if I ever do again, I will definitely be buying the Cran to go with it!

    I would nominate my kid’s school principal! He takes so much time to personally know every single one of the students by name. He doesn’t hide out in his office doing discipline. He focuses on building a quality relationship with the kids so he can actually help them. Be a friend and not someone to fear. Our kids are always smiling when they see him. He definitely brightens people’s days!

    I’d nominate my friend Kathy. She’s been a teacher for 20-some years and has such a great relationship with her students. She also coaches just because she loves to give kids the opportunity to perform in sports.

    I would nominate my mom because she is such a caring and kind hearted individual. She is active member of our church and is always participating in church events. She also helps out at the local food bank. She thirdly watches my son for free while my husband and I are away at work.
