In the winter months, I tend to slack on the cooking. Most nights it gets dark very early, and the last thing I want to do during the dark nighttime hours is cook. I like to make it easy on myself and for this reason I make a lot of casseroles. Casseroles are easy, quick, nutritious, and most of all delicious! Thanks to Foodie.com, I compiled a list of my 15 favorite casserole recipes that I found on their site. I hope you enjoy them as much as I do!

    Casseroles, FTW! I mean seriously, casseroles are the best. You can convert almost any recipe imaginable into casserole form, and it WILL be delicious.

    I never noticed how popular casseroles get during the winter. We never really did them a lot growing up so it isn’t something I think of. Looking at some of these, I think I should change that.
