Some good ole Tamale Pie!

Each week or two, I am planning to feature different recipes that my family enjoys. I will be sharing various appetizers, dinners, deserts, drinks, and more! I try to create healthy and nutritious recipes that my whole family will enjoy. Last week, I shared our apple braised chicken and today, I am going to feature a Tamale Pie that my mother in law gave me the recipe for. It is truly delicious and SO EASY to do! You will also have leftovers so you could make this recipe for two days. Granted if you have a big eater in the family, it could go quickly.

So without further ado, here is the ingredients and directions to make a great Tamale Pie.

Ingredients: 1 cup cornmeal, 1 1/2 lb. ground beef or turkey, 1 red or green pepper, 3 tsp. olive oil, 1 TBLS. sugar, 2 tsp. garlic powder, 3 TBLS. ketchup, 1 can of corn, 1 can of green beans, 1 can of red or black beans, salt/pepper to taste.

Directions:

1. In a large pot, combine 3/4 cup cornmeal with 1 3/4 cup water. Cook until the cornmeal is thickened and then spread into a 9×13 baking pan. This will be your base of your recipe, so make sure it is of a thicker consistency.

2. In a separate large skillet, brown  1- 1.5 lb. ground beef or ground turkey and then add  1 green or red pepper (chopped), 3 tsp. olive oil, 1 TBLS. sugar, 2 tsp. garlic powder, dash of salt and pepper.DSC08785 Some good ole Tamale Pie!

3. Finally add 3 TBLS. ketchup, 1 can corn, 1 can red or black beans, and 1 can of green beans to the large skillet.

DSC08789 Some good ole Tamale Pie! 4. Transfer the meat mixture over the cornbread base you have set aside in the 9×13 baking pan. Bake for 20 minutes at 350 degrees. You can add cheese on top if you like and serve plain, or with salsa, cheese, or sour cream- the choice is yours!
